One of the more delicate leaf herbs around, dill releases a bouquet of herbaceous flavor with a little sour accent. Bright green color in the leaf and notable aromas are good signs that your dill weed is fresh. To get the most flavor from your dill weed, sprinkle it into your dish right before serving or limit yourself to the shortest cooking times possible, for the flavors dissipate quickly when heat is applied.
